the tamales take AT LEAST an hr to be fully cooked....especially if they have meat in them. And for the dough (masa=moss-awe)...how i prepare the dough is by adding lard, bakin powder, and salt. If you drop a piece of the dough into a cup of water and the dough floats, then it is ready. However, i buy my tamales' unprepared dough from a tortilleria. You can also ask for prepared dough so you won't have to go through all that work.
